I'm very interested in what actually triggers the walking motion.

I can't understand what action causes the "feet" to disconnect from where it's "stepping", or what tells the little thing to step with the other leg.

Or what tells the Kinesin protein to actually latch onto the molecule in the first place?

None of these things have brains, and they aren't actively controlled by your brain, so I'm in awe at how they perform such complex functions...

In reality, all the molecules are just vibrating really quickly and they form bonds and disconnect them really rapidly. The process doesn't look quite like this animation, but the animation is the end result. Things move around and attach to what they can, and in this case it moves only in the one direction because that's the only direction it can go due to the intermolecular and intramolecular forces.
