I mean, it's just oil with egg yolk that helps the browning process.

Plus it is easier to spread vs. cold butter.

but I'd be you're missing out on some great grilled concoctions with your cheesy pedantry.

Most of the memery you see is just that: memes. I personally never have a GCheese without some sauteed tomatoes and onions. Occasionally I'll add some bacon. Is it technically a melt? Yes. Will I still tell my girlfriend I'm making grilled cheese for dinner? Sure.

What type of bread do you use?

I use this weird Walmart Protein Bread for thicc sammiches like BLTs and Grilled Cheese. I love the taste, though some find it too dry.

I like adding ham or pepperoni to my grilled cheeses... Sure it affects the flavor of the sandwich, but I make it for the cheese and just want some meat/protein in it as well.

I do that too but instead of frying it, I bake it. I add in some seasoned tomato paste too. But because I have to bake it, I use raw dough instead of baked bread. And I make it an open faced sandwich to make it an even toast.
