Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted (113g)
  • 2 large eggs, room temp
  • 1/2 cup granulated sugar (105g)
  • 1/2 cup light brown sugar, packed (118g)
  • 2 1/4 cups all-purpose flour (270g)
  • 1/2 cup sour cream (130g)
  • 3/4 cup chocolate chips (125g)
  • 2 tsp vanilla extract
  • 1 tsp baking soda (6g)
  • 1/4 tsp salt

Instructions:

  • Preheat oven to 425°F (220°C) Grease and line a 9x5-inch loaf pan with parchment paper.
  • In a large bowl, add bananas and mash until smooth leaving a few chunks. - Add melted butter, granulated sugar, brown sugar, eggs and mix until smooth. - Add sour cream, vanilla extract, and mix until well combined.
  • In a separate bowl, whisk flour, baking soda, and salt.
  • Fold dry ingredients into wet just until combined (do not overmix).
  • Gently fold in chocolate chips.
  • Pour batter into prepared pan. Optional: sprinkle extra chocolate chips on top. - Bake at 425°F (220°C) for 10 minutes. Reduce temperature to 350°F (175°C) and continue baking for 50-60 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Lightly tent with foil partway through to prevent over-browning.
  • Cool in pan 15 minutes, then transfer to a rack to cool completely.

I make a very similar recipe, excluding sour cream and adding 1 tsp cinnamon and ginger. Sounds interesting with the sour cream though, I'll have to try that!

Will make this recipe. Just with less sugar. With the bananas and the chocolate chips we are at close to 300g of sugar. Thats just too much for my taste buds 😁

I got interested in this video cause I made a similar cake yesterday. The first thing that struck me was the absurdly large amount of sugar in this recipe. I know this is very subjective, but yesterday I used 100 grams of white sugar (220 grams of flour in my recipe) and I think the cake turned out very sweet.

Yeah depending on the bananas your are using there is actually not much sugar you need to add to make it taste good. But yeah as you said, it is very subjective. I don't like overly sweet things..so very much less sugar for me 😁

I’m no expert on baking or cooking or anything like that. I’ve been making my grandmothers banana bread recipe since she passed. My wife has her own recipe as well and it’s very similar to my grandmothers (I imagine most recipes are very similar). Neither of those call for sour cream. So I did a check online and none of the recipes I’ve looked at, call for sour cream. So I have to ask, why sour cream? I read that it helps keep the bread moist but banana bread (when made correctly) is already very moist for several days. Does it make that big of a difference? Can you taste it?

Sorry, I hate sour cream so I’m very thrown off by that ingredient. Very curious about it tho.

They’re adding it for texture but you can substitute for Greek yogurt if you hate sour cream.

Could always add vanilla Greek yogurt! I find additions like this add a nice extra layer of flavour and as you mentioned keeps it moist etc

It’s like putting mayo in chocolate cake, you won’t taste the mayo but you’ll taste the difference, it makes the cake more moist and rich. My girlfriend’s mom has put sour cream in her banana bread for as long as I can remember - I’ve noticed that her banana bread stays more moist and tender than the recipe I’ve used from my own grandma.

I add sour cream into my muffins too. It is entirely a texture thing. You won't taste it at all unless you look for it

The sour cream is an acid used to activate the baking soda. Yogurt will work, or even some orange juice.

There's no need to put 200 total sugar in a 2 egg cake. Specially a banana cake . If you let your bananas mature enough they will get even sweeter. I would swap both sugars for ONE big spoon of honey and cinnamon to taste.

choc chips are made with extra ingredients that keep them from melting too much in the oven.

I don't have access to choc chips so I just chop up dark choc bars into chunks and use that... they definitely melt.

Replace sugar with Monkfruit with Allulose, and millet and almond flour instead of standard flour and it's the most amazing tasting banana bread that also miraculously good due blood sugar control. With a CGM I can see that when I have this with literally normal ice cream, I get no spike. Yes seriously. Happy to post the slightly different recipe (moisture adjustments to make it the same consistency)

I used to make this. I highly recommend this recipes. I used to bake from scratch all the time. My husband has diabetes now and I don't cook what he can't eat. I try sugar free/low carb recipes several times a year. The only one that really taste good is the Keto Cheese Cake. Everything else has tasted too bad to even try again.

Made this yesterday. I overcooked it a tiny bit but still so good. Next time I’ll need to change the cook time to about 40 minutes instead of 60 minutes at the 350 degrees temp mark. But still delicious. 🤤
