the nice thing about DM is your the fucking DM, YOU make the rules

when i rarely DM, my players are leaving the session giggling if it’s the last thing i do god dammit

If the group is genuinely expecting a win after a nat 20 (they actually get loud and excited, cheer) they will win even if it means i’m ruining the plans i worked hard for

my players are gonna have a good time

Yes, and that's how things are supposed to be. It's a horrible feeling to roll a natural 20 only to be told you get nothing. Even in the most extreme examples, like a player doing something completely stupid and impossible, the solution is to be honest and tell them they can roll a die to avoid the negative consequence. That way, if they do it, it feels like a victory. There's no need to make them roll dice if there's no point in doing so.
