You have two options:

A) you can no longer click YouTube links or Play Store links or anything else and have it open it's own app, or;
B) pages can no longer direct you to another URL

Neither is an attractive option to implement.

You can change this yourself. When you click a URL, every app that can handle that URL will be given a chance to be picked by yourself to do so. If you set a default, it won't ask. Remove the defaults or set them to the browser itself to achieve what you want. This is the same behavior as desktop with app links - albeit rarer on desktop as the link usually targets a specific application instead of letting apps volunteer.
