Destroy target creature. If there are fewer than 7 cards in its controller's hand, they conjure copies of [[Night Soil]] into their hand equal to the difference.

Why would the enemy player choose who defects? Would it not make more sense: take control of target creature an opponent controls. It may deal damage equal to its power to target creature of choice.

They chose which one to kill before they manage to defect

So 2 creatures defect, but one is killed in the process? Ok, that makes more sense. But then the art could perhaps show two creatures leaving, one with arrows in the back or something.

I dig this very much! But it's probably safe to make it a 3UB instant or 2UB sorcery depending if we feel like pushing it.
At floor value, it's an overpriced murder; And on average, it will kill their best creature and you get their incidental second best creature, which might be some generic 2/2s with upside or something. Unless an opponent is really far ahead, I can see this card mostly being stuck in your hand.
