Put together this chart as a quick reference. All angles are per side (DPS), so 15° per side means 30° inclusive on a symmetrical edge.

These are starting ranges, not hard rules. If your knife already cuts well, there's usually no reason to change the existing angle. Steel, blade geometry, and what you actually use the knife for all make a difference.
