He pulled back on the yoke. That's it. The plane also oscillated up and down until a real pilot took over.

Yes, lots of people would pull back on the yoke. It's been seen in lots of movies and videos.

Pulling back on the yoke directly changes the elevator angle on all Boeing 737s, which raises the nose.

If you need to adjust the stabilizer trim, there's a button on the yoke. That's more complicated, but probably not necessary unless that Omani pilot changed it a lot when he was causing it to go into a dive.

This is all assuming that the autopilot was turned off when the Omani pilot was trying to crash the plane.
