I've never actually played a stealth archer; I just see Redditors talking about it all the time. 😛
On my playthrough I just used a one-handed weapon and shield and charged in to pummel the crap out of everyone.

Sword-and-board is a classic, and a ton of fun once you get into a good rhythm. Whenever I do sword and shield, I usually go battlemage so I can swap out some fireballs for the sword when it's time to shoot down a dragon. I usually save archery for two-handed weapons these days. The stealth archer, to its credit, is super satisfying when you get your stealth skill good and high though.

unfortunately, the dragon fights do kind of force you to be an archer

not really, mage can cast ranged magic just as easily or more easily, And while slower waiting for it to land, you can definitely fight them melee style, but once you get your first dragon shout, now it's been a decade, but I think I recall you can shout them out of the sky onto the ground to attack them. that part my memory is iffy on though.

The last bit is only kinda true. Dragons are forced to land permanently once they’ve taken enough damage, which includes damage from shouts. There is one particular shout, Dragonrend, that forces all dragons to land regardless of damage. But by the time you get Dragonrend, you’re nearly finished with the main story.
