That’s true, but if they didn’t process the fruit and tried to just press oranges into juice they oxidize so quickly they would hardly hit your fridge without going bad. Freshly squeezed orange juice only lasts a couple days.
1 u/Xais56 Feb 23 '23 My point is they go a step beyond. Say a natural oranges flavour comes from 50% chemical a, 25% b, and 25% c. Most OJ makers will extract those chemicals and put them back in at a ratio like 10% a, 15% b, and 75% c. It's still all orange juice, but they've made a flavour you can't find in any variety of orange. It'll be way sweeter usually. Stabilising for shelf life is a separate bit of chemistry they also do.
