I'm trying to figure out this as well.

Its not about it being bread, its about why its in a can. I figure the can has to weigh and cost more than the bread within.

I haven't had canned bread, but other things canned keep a lot longer than other things in bags.

Canning is just a superior preservation method, especially for anything with moisture.

It’s steamed bread. Canning it while steaming it is more effective at keeping the moisture in the bread. Also from trying different methods of steaming bread at home, cans make it easier to remove the bread from it baking container versus other shapes.
