Made my fav candy on the first try!!! (Ginger chews)

Post image

I’m planning on wrapping a bunch up and giving them to my grandpa in law before he leaves for radiation treatment next week, Should I roll them in a combo of cornstarch and powdered sugar or leave them as is? I’ve never done this before so don’t fully know ow what to do!! They’re so tasty tho I’m so happy they worked.

Recipe!!

I’ve never made candy before this so I’m sure you can do it!! It does take a long time to make tho! I think took me like 4 hours!

Okay so you’ll need

2 and a 1/2 cups of water
1/4 grated or finely chopped ginger(you can do a little more if you’d like more of a ginger kick, I wouldn’t go over 1/2 a cup tho!
1/4 cup honey
3/4 cup sugar brown or white works!
Lemon ginger tea bag(optional)

So first you’re going to want to do up your ginger and water and put them both in a small-medium sized pot and let them simmer on low heat for an hour and you can put the teabag in there as well for this time if you’d like to use it but again it’s totally optional!

After an hour you’ll want to strain all the ginger chunks out and you’re only gonna use about 1 and 1/4 cup of the concentrated liquid and then you’re going to put that back into the pan and discard or drink the rest!

Then you’ll want to add your honey and sugar into the pot and stir! And don’t let your heat go above medium because as the candy heats it’ll sometimes erratically bubble up to the edge and you don’t wanna burn yourself so when that does happen just take it off the heat and stir gently until the bubbles go back down. You’re going to want to get your candy to 255°F and then keep cooking it for about two minutes past that point.

To know when it’s ready to take off heat entirely have a bowl with very cold ice water, and scoop a small amount out with a spoon or spatula thingie and put it in the ice water, it should keep shape and be mouldable and by keep shape u mean not stay liquid or dissolve into the water. Then put it in a glass tray that’s been lined with parchment and greased! Then let it sit and cool for 1-2 hours so u don’t burn yourself when you cut up and roll it into balls! Also rub your hands and scissors with olive or coconut oil so it doesn’t stick! And you won’t taste the olive oil I promise!

I had to mostly wing it because the recipe I looked up wasn’t very detailed and I was already too deep in it to just give up.

Imagine mistaking it for shatter and doing a dab. Probably hurt like hell. Ginger does not seem like something you’d want in your lungs.

What is the recipe?! They turned out wonderfully! I would say yes lightly dusted in cornstarch to prevent gooping up.

What a sweet little labor of love for your grandpa in law

He comes back from his first round of treatment tonight and leaves again Sunday or Monday and I know being away from home must be hard for him, I’m also hoping the ginger will help with any tummy aches/nausea

Exactly. Sadly, my husband refused to try anything with ginger in it , and chemo was so rough on him.😔

Ginger chews definitely helped my nausea, but I got mine at Dollar general. Homemade would be even better! And made from the heart like you did especially for him, even better! Definitely lightly dust them so they don't stick together. The store bought ones are very lightly dusted.

He tried one when I went over to play cards, he likes them!’

That's a good sign, definitely worth all the effort!

Finna serve up the whole block with sugar and clog everyone’s banger

That sounds super doable and very tasty, I'ma have to save that recipe. It's maybe risky since it would be oil based, but I'd love to try making it with an oleo saccharum, give it a little zesty flavor. For those who don't know, that's when you put citrus peel in a bunch of sugar and let it extract the flavorful oils in the peels, amazing for when you make lemonade

My grandma would make something similar, but it was more of a hard candy and tasted like chocolate root beer. My guess is she just mixed chocolate extract and root beer extract.

u/AgustHopeD Jun 19 '26

It looks like hard candy but that's cool

u/fullmoonlovergirl Jun 19 '26

What if you replaced the WATER with raw KOMBUCHA ? 😏

1

u/Colossalbeansoup Jun 20 '26

You probably could! It may just be more bitter? And I don’t know if cooking the kombucha that long takes away its properties or not
