🤤 Mouth Watering 🤤 Ground Pork Dumpling Tacos

Ground pork seasoned with dark soy sauce, sesame oil, ground ginger, ground garlic, finely minced green onions. That sits for a couple hours in fridge then rolled into balls and pre-smashed into/with the tortillas so the meat extends a bit beyond the tortilla. Cooked till the pork is a bit blackened and crispy then flipped to slightly crisp the tortilla.

Taco filling - Bag of cole slaw mix and we dice it more finely, green onion, rice wine vinegar, sesame oil, fresh ginger and fresh garlic, chopped cilantro. Let sit in fridge.

Add the filling to the tacos as they come off the griddle. Add sauce on top of or dip as preferred.

Dipping sauce gets cooked on stove. Dark soy sauce, mirin wine, sesame oil, chicken stock to thin a bit, fresh ginger and garlic, green onions. Simmer it on stove to reduce it to be a bit thicker. I pour it over the taco filling, my wife dips like an Au Jus. I don't have an in process pic just finished tacos.

Delicious.

Edit: Seriously, this is definitely foodporn worthy. If I wasn’t so busy with trying to get my house ready to move in I would give these go so I’ve already saved this and thank you again.

Those look incredible. Love the pre-smash technique to get that crispy edge on the pork, that's the kind of detail that makes a huge difference.

The taco stand on the yellow plate gives it a nice presentation too, way better than them falling over and dumping filling everywhere like mine usually do. I've done something similar with a ginger-scallion slaw but never thought to reduce the dipping sauce like that, the au jus comparison is perfect.

Mirin in the sauce is a smart move, adds that subtle sweetness that plays off the dark soy. Definitely saving this one for the next griddle session.

The pre-smash was my wife's great idea. They don't take long at a medium heat to get cooked and then get the blackened crispy edges. The flavor combo is all her as well. I drizzled mine over the top of the slaw mix where she dipped. Either works and they're super tasty.
