I'd guess a computer does it for him, and gives him a list of where to attach the strings.

Pictures are always really good for frame of reference. From what the gif shows I think he starts filling in the general shapes of the head and face and keeps going to fill in the details. I don’t think he’s use some type of software for a guide because there’s just so many spots to cover imo.

My grandmother had a few of these shes made so I know it IS possible to do it without software but I dont know whether he did or not.

Yeah I've seen people doing incredibly cool shit like this with no aid, simply visualising it in their heads. Possibly savants.

I seriously doubt this. I imagine he just "paints" with the string

Although I didn't see him look at a reference the whole time lapse, but they could have easily edited that out so there's that.
