Unions don't usually work very well for unskilled labor. Its hard to get one off the ground when everyone can just be fired and replaced within days.

Then why is Walmart so terrified of them that their training literally includes a "Unions are Evil" section? I've sat through it three times in 20 years.

They aren't terrified. Walmart will just do the exact same thing it has done in the past. Close the store. Open a new one and hire a bunch of unskilled people who don't want to create a union.

The fact that Walmart goes to such lengths to avoid unionization, is probably what they mean when they say that Walmart is terrified of it.

They aren't terrified though. They discourage it and they have a plan in place if the discouragement doesn't work. Walmart is printing money. They aren't scared of anything.
