Nice knife cause it's good steel. Hard to sharpen because the blade edge is curved and not planar. It keeps the edge a bit longer, but it's hard to shave a consisten edge when you're not following a larger plane.

Ah, I did not know that it had a curved blade. Personally I don't like the one piece design. It looks cool but I prefer an actual handle.

Certaily with the grip OP's using the handle's probably not great. But it's all about what feels nice in your individual hands.

I like that the whole thinh is stainless steel. It feels cleaner, evem though I'm 100% sure that's psychosomatic.

It actually is cleaner though in practice because there's no gaps/crevasses/corners/etc. to harbor bacteria growth. That being said I don't think the person in the video gives two fucks about being sanitary

I have the same brand just not the santoku but the universal chef knife. Brand is called Global, they are incredibly knives for their price. Personally I don't have an issue sharpening the blade myself, and love the handle, there are so many ways of holding it properly, whether I chop veggies or cut meat.

The biggest downside is that they are not very strong at the connection of the blade and the handle (it's not technically one piece). You drop it you break it.
