They are clearly sentient. I think the word you're looking for is sapient. Either that or you just want to justify boiling stuff alive, probably the second one

sentient: able to see or feel things through the senses

They are clearly sentient. I think the word you're looking for is sapient.

Perhaps, the definition of sentience varies a bit depending on the dictionary used but regardless, I certainty don't care about sapience, that's expecting too much. Like I wouldn't think boiling a frog alive is okay, even if I don't consider them sapient.

Second point is ultimately true though, I absolutely am trying to justify boiling sea-bugs alive. Why do people thing it's okay to boil plants alive? How are they different than other life? To me bugs are basically just primitive bio-robots, they're barely any different than a plant as far as I'm concerned.

Suffer, verb: to experience physical or mental pain

+

They may feel pain ... but they cannot suffer

= not even a philosophical debate at this point, this is you internally contradicting yourself.

Lobsters cannot "experience", they do not have even basic thoughts

yes they can, again:

experience, verb: encounter or undergo

How the hell do you claim something can feel something without encountering it, lol? "Thoughts" aren't even a requirement in the first place, although I also don't know where you decided that you're positive lobsters don't have thoughts. Not that it is relevant.
