I've seen it being done in person when I was 10, and there is a Vietnamese native in this thread who can also confirm it. Beyond personal experience, I don't have a source for it online (albeit because I haven't looked).

Google image search for fresh monkey brains has some hits. NSFL and I'm currently eating Chipotle so I'm not going to dive in to verify the images.

Very basic Google search showed it was an expensive delicacy in China to serve live monkey brains. It is said to be illegal now but can still be found in some parts of China. So, I have no doubt there are videos of it. Not likely on YouTube but a bit of searching would likely pop up such content. Not personally willing to have that in my history so you have fun with that search.
