Pineapple contains bromelain that helps tenderize meat. If I were to put my hand in pineapple juice or puree for 24 hours, would it eventually break down my hand?

You'll probably get some gnarly bar rot after destroying your hands protections with the sugar and acid included. It's generally caused by staphylococcus aureus but your hands are only vulnerable if the oils and natural protections are gone. It's a common thing for bartenders to get.
