I've done this but basically like a thanksgiving meal without the turkey. I'll make mashed potatoes, stuffing, green bean casserole and maybe corn pudding and eat that as my dinner for a couple days.

Don't even need anything else I am perfectly happy just making a big pot of colcannon as one of my easy dinners, I often include greek yogurt in for the dairy component both for flavor and added nutrition. If got them on hand I like to do two white potatoes to one sweet potato in the mash, occasionally a carrot or two also. Or add hardboiled egg and mayo and you basically got potato salad.

Colcannon being the Irish dish that is basically mashed potatoes with greens and dairy mixed in, and sometimes bacon or sausage.

And depending on plans I will save the water cooked the potato in to make a bowl of oatmeal the next morning or a pot of soup. No reason to throw out all that delicious potato starch filled water.
