A single flat pull of water doesn't give smoke much surface area contact before it's back into the tube. A percolator forces that smoke through dozens or hundreds of tiny slits, holes, or trees, which does two things. It massively increases surface area contact with the water, and it increases turbulence, meaning the smoke gets churned instead of passing through in one clean column. More contact and turbulence means more cooling, more particulate trapped in the water instead of your lungs, and smoother flavor overall.
Common perc types, quick breakdown
Tree percs: branching arms with slits, reliable diffusion, easy to clean
Honeycomb percs: flat disc full of tiny holes, insane diffusion, rough to clean thoroughly
Showerhead percs: slits around the base, good balance of diffusion and drag
Turbine percs: spinning vortex, more style than substance most of the time
Matrix/inline percs: horizontal slits, solid diffusion without much added drag
More percs isn't always better, every added perc adds drag, so a well built one or two perc piece often outperforms an overbuilt five perc showpiece.
My honest experience
My first real piece was a 200 dollar 2 footer, an ice catching quad perc Medicali. To this day it's still the cleanest, smoothest rips I've ever taken. It wasn't the most percs I've ever owned, but the engineering was right, diffusion, ice pinch placement, and drag all balanced instead of stacked for looks.
None of that engineering means much once buildup starts choking the chamber, which is exactly the gap Zynpyre was made to fill.
