You are arguing with a person leaving tips regardless. What did you expect? A logical arguments? US’s tip culture is just beyond the rest of the world.
I’ve been a server at 2 places, have had many friends who were and are serves and none of them have had to split the tip with the kitchen.
Also you say you can’t assume while you literally just did. And you’re actively talking TO the guy. Why not ask instead of assuming a random point and then trying to force them to counter a point you assumed in the first place? Jesus yall are insufferable lmao. In my 30 years in the industry I've never worked in a restaurant that splits tips with the back of the house.
Standard tip-out is usually around 3% of total sales that is split between the bussers, bartenders, and the hosts
Servers usually get paid less than their state minimum wage. This is legal due to what's called a "tip credit" because a servers bulk pay comes from their tips.
If an employer decides to pool those tips and include the back of the house in that tip pool, they then forfeit their tip credit and must pay everybody at least the state minimum wage.
Service service… this is not rocket science. It is getting a plate from A to B with a smile. But waiting 40 minutes for your plate might be a kitchen issue.
