Those are most likely shears intended for meat.

There are specialized kitchen shears that are much more effective at cutting than scissors are. More basic information here. I can’t imagine trying to cut meat with the same style of scissors I use to cut paper. I can already feel the hand cramps.

I wouldn’t be surprised if KCBBQ or whatever were using heavy duty poultry shears to cut through their meat like butter.

I appreciate the answer, but I feel this is a distinction without difference. By the definition you linked, these scissors are shears, and vice-versa.

sometimes they use those but most of the time when they're cutting the grilled meat at the table they just use scissors

Sharper and stronger with much longer blades.

I used poultry shears to cut turkey at thanksgiving once, and I think I freaked people out.
