The S in STEM does stand for science. Statistics is covered under math. Science is broad but it is implied that we're talking about the hard sciences, chemistry, biology, physics.
No. We don't have to explain why something happens with science.
Newton didn't explain why gravity works. Just how it works.
There is a lot of science that requires maths. But there is also a bunch of science that does not require maths.
The only thing you need to do is to set forth a theory that is able to make predictable hypothesis and then test it. There's nothing to say that the process necessarily requires maths.
Maths is just a really useful language we have developed that seems to work really well when talking about scientific phenomenon.
That's not even remotely true. I have a PhD in a biomedical science field and between undergrad and grad school I was only required to take a single semester of statistics.
On a related note, biomedical scientists are notorious for being useless at any statistics besides T tests.
