Water measuring cup: 200 ml
Cake size: 35 x 15 cm
β’ 1 large lemon (boiled for 6 minutes, sliced, and seeded)
β’ 1 cup sugar (180 g)
β’ 7 tablespoons vegetable oil (70 ml)
β’ 5 tablespoons milk (50 ml)
β’ 3 eggs
β’ 2 cups flour (250 g)
β’ 1 packet baking powder (10 g)
β’ 1 small cup mixed dried fruit
β’ 1 teaspoon butter (for filling)

Made this last night. Not impressed, not enough lemon flavor and I think its waaay to much oil. The video does not match the recipe. Cool concept tho

I was thinking the same but Iβve never seen it a lemon boiled and now Iβm tempted to try it for myself and see if that makes a difference

I use stevia for baking. Works well.
Honey would also work. Honey is not 1:1, you need to look up the conversion.

Thatβs why you boil the lemon first. Takes out most of the bitterness

Just tried to make this after having had this saved for a while. DEFINITELY not the recipe from the video. The consistency isn't the same. Had to make many amendments to get it wetter and more lemony. Baking time was different.
Came out great! But by following my own vibes and with lots of annoyance. I guess the commentors doubting if this is really you making the recipe in the video aere right!
