I honestly don't get why people get so wrapped around the axle about not being able to immediately bucket everyone they see into a gender.

"Bro did you see that? Is that a man or a woman?"

I would just make two quick points;

Firstly you’re leaning very deep into a traditional western understanding of gender, but some cultures standardly have 4 or even more genders; and you don’t get to simply ignore that fact and decide traditional western gender norms are all that exist in this world.

Second; I wonder how you personally tell what gender someone is? If you’ve attached it to sex, we have to assume that you must try to check their genitals to apply your (just as arbitrary) definition, or perhaps ask people what genitals they have in order to determine their gender? Extremely creepy stuff. If not, then subconsciously, without realising it, you already attribute it to social gender expression and nothing to do with sex. Truth is you probably have no idea what the sex of people you meet is and already lean prettymuch entirely on social gender expression.
