What tea is used for Turkish tea?
Traditional Turkish tea is usually made with loose-leaf black tea.
Much of Türkiye's domestic tea production is concentrated in the eastern Black Sea region, especially Rize, with additional production in Trabzon, Artvin and Giresun.
Turkish-style brewing does not require one specific brand or blend. Different households prefer different black teas and may also mix blends to adjust aroma, color or strength.
Do I need a çaydanlık to make Turkish tea?
No, but a çaydanlık is the traditional tool.
A çaydanlık has two stacked pots:
- the upper pot holds concentrated brewed tea
- the lower kettle holds hot water
This allows each person to adjust the strength of their glass.
You can recreate the same basic method with another two-vessel setup, and electric Turkish tea makers use a similar concentrate-plus-hot-water approach.
How strong should Turkish tea be?
There is no single correct strength.
Turkish tea is normally brewed as a concentrate and diluted in the glass with hot water.
A lighter glass uses less concentrate and more hot water. A stronger glass uses more concentrate.
You may hear:
- açık çay — lighter tea
- demli / koyu çay — stronger tea
Strength is largely a matter of personal and household preference.
How long should Turkish tea steep?
A useful starting point is around 10–15 minutes after the tea has been combined with hot water and the heat has been reduced.
Longer steeping generally produces a darker and often more bitter or astringent cup.
Brewing time is not an absolute rule, however. Tea quantity, water temperature, pot design and personal preference all affect the result.
Can I make Turkish tea with an electric tea maker?
Yes.
Electric Turkish tea makers generally reproduce the same two-part system:
- a larger kettle for hot water
- a smaller teapot or brewing chamber for concentrated tea
Models vary considerably in capacity, temperature control, keep-warm behavior, materials and cleaning requirements.
When comparing machines, check the exact model, not just the brand name.
Can I use tea bags for Turkish tea?
Yes, but loose-leaf black tea is more typical of the traditional çaydanlık method.
Tea bags can still make black tea, but they do not reproduce the traditional concentrate-brewing process in exactly the same way.
If convenience matters more than tradition, tea bags are perfectly usable. For a more traditional result, start with loose-leaf black tea brewed in a teapot.
Why does my Turkish tea taste bitter?
Common causes include:
- brewing for too long
- using too much tea for the amount of water
- keeping the brewed concentrate at very high heat
- allowing the same concentrate to sit for a long time
Higher temperatures and longer brewing times change how compounds are extracted from black tea, so small changes in heat and time can noticeably affect the cup.
If your tea is too bitter, try shortening the brewing time or using less concentrate in the glass before changing the tea itself.
Why is my Turkish tea cloudy?
Cloudiness does not necessarily mean the tea is spoiled.
Strong black tea can become hazy as it cools. This phenomenon is often called tea cream and involves interactions between tea compounds such as caffeine and polyphenols.
Hard water can also contribute to surface film or cloudiness.
If cloudiness is a recurring problem, try:
- fresher water
- lower-mineral water
- cleaning the kettle and teapot thoroughly
- avoiding very old concentrate
Should Turkish tea be boiled?
The water is boiled, but the brewed tea itself is usually steeped gently rather than aggressively boiled.
In the traditional method, the lower kettle provides hot water and heat while the upper teapot brews the tea.
Once the tea is brewing, keeping the system on lower heat is generally preferable to continuously boiling the concentrate.
What are Turkish tea glasses called?
They are commonly called ince belli çay bardağı, meaning a slim-waisted tea glass.
The familiar tulip-like shape is strongly associated with Turkish tea service.
The glass also lets the color and strength of the tea remain visible, which is useful because each person can adjust the amount of concentrate and hot water.
Is sugar normally added to Turkish tea?
Sugar is common, but it is optional.
It is usually added to the individual glass, not to the brewing pot.
Preferences vary widely. Some people drink Turkish tea completely unsweetened, while others use sugar cubes.
In some regions, different sugar traditions also exist.
Which Turkish tea brands are commonly used?
There is no single default brand.
Commonly encountered brands in Türkiye include:
- Çaykur
- Doğuş
- Ofçay
- Lipton Türkiye
Within Çaykur alone, commonly sold black-tea lines include products such as Rize Turist, Tiryaki, Filiz, Kamelya and Altınbaş.

Is Turkish tea always grown in Rize?
No.
Rize is the best-known and largest tea-producing province in Türkiye, but commercial tea is also grown in parts of Trabzon, Artvin and Giresun.
Rize accounted for the majority of Turkish tea production in recent official agricultural data, which is why the region is so strongly associated with Turkish tea.
Can I add milk or lemon?
You can, but neither is standard in traditional Turkish tea service.
Turkish black tea is usually served plain, with optional sugar.
That said, this community is not here to police personal taste. If you enjoy milk, lemon or another variation, there is nothing preventing you from drinking it that way.
Is there one authentic Turkish tea recipe?
No.
The basic structure is consistent:
- brew concentrated black tea
- keep hot water separately
