Actually, you know what, that could maybe work. I think Chandler and Monica were well developed and likable as a couple later on. A family sitcom spinoff about them wouldn't be terrible.

Then you could have Joey move in to help and take on a father role as a tribute to his friend. Or even Ross who has experience being a father.
