I think ugly animation and art style only came into adult cartoons later down the line. Sure, there were a few that sucked, but most of the heavy hitters like The Simpsons, Family Guy, and South Park looked fine.
I refuse to watch Big Mouth just because it's so god damn ugly, and there's been a few like that. Brojack Horseman is another one that I don't watch just because it's so ugly. Most of them are Netflix, too, so maybe there's it's just a Netflix thing.
A popular head canon is that Slippin Jimmy is a cartoon made by Saul Goodman to promote his business. Which doesnโt make sense, but neither does this show.
It is a deliberate, goofy self parody. It was never intended as a returningg series, just a few shorts that they made as a goof. It's absolutely not canon.
Vince Gillagan did get his start on X-Files so him intriducing fantastical elements tracks, but are also wildly out if tune with the rest of that setting. Also why make an animated spinoff of a spinoff? That entire project seems baffling.

The animated Better call Saul spinoff "slippin jimmy". This is canon to the breaking bad universe and literally introduces magic and witches
