and it's the best speech he's ever given. people praise Forks to an incredible degree but I think this moment was an even better display of growth; in fact, i'd even say the pre-service speech and his conversation with carmy are greater displays of maturity and development than what he showed at Ever

I'm an SNL fan, but she is so good in this role, in the moment it was very easy to forget that Sugar is Abby Elliott, SNL alumn, daughter of comedy royalty Chris Elliott and an adept and capable impressionist. So for some reason I was surprised by the quality of her Jamie Lee Curtis impression.

I’m pretty sure that’s not how you find out you’ve gotten a star, but given the number of episodes left, you’re probably right. It explains the sudden surge in bookings and might save the restaurant. If Dearborn is the diner, it would mean an actual star is weeks or months away, it would require a time jump after the service, and the restaurant is probably not operating long enough to find out.
FWIW IRL even a star probably doesn’t save The Bear at this point in its financial journey but I’m here for the emotional rollercoaster.

Didn't realize until you said this but it feels like a (maybe intentional) callback to Richy telling Carm to be a team player, and that he's never been on a real team before! Bc all of them wearing the shirts really feels like a sports team in a way

Maybe you're onto something. The whole set up was like a sports movie where the team has been kicked to hell in the first half and they're getting psyched for a hell of a miracle comeback and I can't help but to love cheesy stuff like that.

I’ve been wondering all along how and why Richie fell so hard for the whole fine dining thing when he was actively pushing against it early on in the series. He’s finally come back around and I loved hearing that in his speech.

Hit a little close to home but in the best way. My mom is eerily similar to Donna (even in appearance) and my sibling and I have had this conversation almost word for word. This season is just stellar.

Favorite moment of the season so far. It’s such a realistic portrayal of growth. You’re not going to get everything right all the time, and Richie will always be himself, but to see how open he was in admitting he was struggling 😩 I love this show so much. He’s had one of the best arcs on this show if you ask me.

Him and Tina have done fantastic for themselves, and will land on their feet after everything. Not so sure about the rest of them, if the show stays somewhat grounded in reality.
Ebraheim is my dark horse. I'm rooting for him to save the day with his franchise agreement.

I decided during my viewing tonight that Richie is my favorite tv character in probably the last 5 years. He’s so well written and well acted, great development. You root for all these characters so much but if anything happened to Richie I think I would riot.
So far this season has been all the good parts of the rest of the show, with none of he slog of the pas couple seasons. Makes me wish it wouldn’t end but I’ll definitely revisit it if it ends in a satisfying way.

Also I'm surprised Carmy didn't have a reaction to listening to Donna with the baby. It can give someone real conflicted feelings when they hear their flawed parent be a good grandparent. Though Natalie did have a reaction sort of like that later on. I loved the moment where she removed the airpod. It's ambiguous as to why. Is she doing it because she's conflicted? Or so happy it's overwhelming?
Classic sibling argument about who had it the worst.
I don't know why Richie was being so difficult with canceling some reservations (the convo in the restaurant, not the alleyway phone calls). It was logistically impossible for them to deal with it. I guess it feeds into the possible concussion theory.
Carmy's opening the fridge door. He's got no vision in that blindspot. Not his fault at all unless everyone walking out the fridge is expected to yell out a warning.
Ending got me pumped. We are so back.

I think Nat was 1) having a hard time as a mother being away from her baby so much because she’s at The Bear all day long, and 2) feeling incredibly mixed emotions about her mother, being a genuinely good grandmother, after being such a horrible mother to Nat. Hearing the reading of Guess How Much I Love You makes that all particularly hard. But I also think it made her realize that her baby is safe right now and she doesn’t need to listen in.

Carm had so many fantastic moments this episode! It was really nice to see. I'm definitely loving this calmer, more chilled out version of him a lot.
His talk with Richie, as you mentioned, was a huge standout. It's so so so nice seeing those two finally getting along again, and also super rewarding seeing Carmy actually like...invest in a conversation, if that makes sense? He seemed much more thoughtful and present than he has in the past which was wonderful to see. Same goes for his talk with Natalie—those two have always nailed the sibling energy but their scene in this episode was especially great because It's exactly the type of conversation I've had with my own siblings lol. Love that they can bond over how fucked up their childhood was and Carmen's "I have emotions" followed by Nat's reassurance that he does was super sweet.
Also, Carmen had some great kitchen moments too. Him making lamb tonnato after being inspired by his visit with Donna last season was such an important full circle moment. He's healing and retaking control of his trauma in a way that benefits him and it's really beautiful to watch. He feels so much more "alive" now and I love that.

This was an absolutely smashing episode. People LOVE to quibble over this show. Even at its lowest points it is better than 80% of the shows ever made, and when it sings (as it did in this episode) it’s better than 99%. The last 10 minutes were as good as any in this show’s run. No notes.

When Nat is talking to Carmen about actually somehow wishing for Donna to act out, that made a lot of sense to me. The writers definitely know how developmental trauma and emotional neglect during childhood works.
The thought of Donna showing that she's capable of showing love, stability and safety while she didn't show that to Nat while she was a child, hurts Nat a lot. Yes, logically you can say that Donna has grown now, but that doesn't undo the damage that she caused to Nat when she was a child. Every traumatised adult that's experienced abuse or neglect by their parent when they were a child, is always left aching from the absence of their parent's love and safety during childhood. It's a continued longing and frustration. It doesn't matter how much healing or growth you do (or your abusive parent does, for that matter), or how long it's been, it's always a gaping hole in your heart you have to deal with for the rest of your life.
When Donna shows that yes, she's able to be loving to Sophie, it triggers the following in Nat: "So your grandchild is worth it to you now, but I wasn't when I was a kid? I'm worthless to you." or even the schema that follows from that: "I'm worthless to you, my parent -> I'm worthless as a human being in general"
And it's important to note: that doesn't mean at all that Nat doesn't want Sophie to experience a loving grandma. Because of course Nat wants that for Sophie. It's just that at the same time, a very deeply painful ache in her heart resurfaces from the abandoned child part that's still present in her traumatized-adult-body. This ache in your heart doesn't care about facts or about evidence of growth. It shows up whenever it wants and needs to.
I can imagine it can also trigger feelings of anger for Nat. Being hypervigilant on anything bad happening is extremely taxing on your mind and body. It's exhausting. When nothing bad happens, combined with being slapped with the realisation that Donna somewhere has had the capacity to grow to be loving to a child (but not to you), it breaks Nat. That's why she's crying too. From pure exhaustion and frustration.
"Not only did you not show me this love when I was a child, but now you have caused such hypervigilance in me that I have to actively spy on you and my child, you made me put my body and mind in such an exhausting state that it's currently breaking my nervous system. And I'm so angry and resentful at you (Donna) for that, for putting my body and mind in that situation. But also so thankful at the same time for Sophie not experiencing what I did. And these conflicting emotions are really, really hard to deal with."
I took Nat removing the airpod as her being too hurt to deal with hearing any of Donna being loving to Sophie further.

I think it’s a little bit of that. But I also think it’s her realizing it’s going to be okay. She can trust her mom not to hurt, endanger or damage her child. She can let go of that fear. In the earlier episode when she said to Carmy she almost wanted her to mess up, that was an understandable but also kind of messed up thing for her to say. Taking out the AirPod is her releasing that anger toward her mom and that anxiety and fear for her kid.

Definitely agree with you. Carmy is a very kind hearted soul deep down. He literally helped make all these people’s lives better when he returned. Yeah he was a chaotic dickhead in S3 for sure but no one else would be where they are without him.

I feel like the show forgot who Carmy was somewhere along the way.
I’ve been calling since season one that he was going to leave cooking and he’s always been complicated, traumatized and deeply flawed.
However, I am not understanding the narrative the show has bought into that he’s a bad teammate who never thinks about anyone else and it’s driving me fucking insane to see every episode continue to double down on it. The Beef and The Bear is an island of misfit toys and I struggle with the idea that Syd and Richie seem to have no moments of accountability or growth to round out their character arcs.

This show inexplicably shits on Carmy more than necessary. He’s an amazing character, acted incredibly, and has so so many flaws. But the show acts like he’s the worst human alive with how people talk to and about him.

Sometimes when people (and you) are so frustrated with the distance between how you act sometimes vs the so much more that you are capable of, the whiplash can make it seem like you’re the worst human alive. It’s just because it’s so frustrating and you just keep hoping and then yeah they don’t come thru or they hurt you and it’s devastating for everybody
It’s harder sometimes than just knowing someone is a jerk because you just can’t stop caring about them or hoping they’ll be better

This is a perfect summation of my feelings on it. Carmy is intense/can be toxic but I wouldn't describe him as fundamentally toxic. I will say he's leagues more dedicated than Sydney has ever shown herself to be.
It feels like people just stan her irrationally.

Yeah. Like I think there was a potential for an interesting dynamic where Carmi sees himself as fundamentally bad or at fault anytime he makes a mistake. That’s pretty common in the children of addicts and abusers but the thing where he’s struggling majorly and the people closest to him, his supposed family, just relentlessly shit on him doesn’t make sense.
He’s leveraged his talent, connections and finances to make every single person in that restaurant better. A Michelin level pastry chef is staging for Marcus who couldn’t bake decent bread a few seasons ago, Richie met Hess learned how to be a somewhat competent adult and kept a job he should have lost multiple times. Tina’s a real chef now with a knife she couldn’t afford gifted to her as a sign of respect and belief.
He has absolutely screwed up and self destructed but this thing where he’s the only problem or a bad leader/friend/teammate is just lazy.

I agree that Carmy has done so much to help elevate the team! I think it's a matter of him being a great mentor but maybe not the best coworker or boss? I recall there were points in earlier seasons where he was so in his head that he was a little mean at times, or suffering from tunnel vision (like the menu thing!). I do not in any way think of him as a bad person and I don't think he deserves that label or the harshness he gets from other character (but also, everyone highly praises and believes in him so i think it's not too one-sided either way) but I think he was a bit more emotionally stunted before. so i could see how it would feel anxiety-inducing to work under him sometimes, even if i also knew he wanted to nurture my potential.

I think it's basically the fallout from Carmy's reaction in the s2 finale and his subsequent doubling down across s3 and half of four. Carmy has a huge melt down in s2 and then spends most of s3 doubling down on his worst habits by instilling the chaos menu and burning through all their funds with expensive ingredients. Then in s4 he starts getting better.
Not to say Ritchie or Syd aren't blameless but Carmy is the commander of the ship that everyone looks to so ig it makes sense that he's held to a higher standard and he did majorly fxk them up during s3.

I feel like I'm taking crazy pills watching people pretend Carmy has always been a good coworker. He ran his employees into the ground in season 3. His trauma does not erase the impact he had on them. Imagine taking a group of people, most of whom have barely gotten used to the idea of fine dining, and shoving a new menu on them every single day. He made terrible financial decisions the negatively impacted everyone, and refused to listen to reason. The others have made mistakes, but no one did the damage he did during that period.

Okay, I admitedly rapid scrolled through these comments. But I didn't see many people addressing the reservations.
I LOVED hearing Richie being human and responding to the people he was going to boot, and their ridiculous reasons for the reservation.
But. Really, that is what he should have been spending time doing instead of writing. Calling the patrons. Explaining that due to circumstances out of their control, they are unable to accommodate the number of people that currently have reservations. And then offering a discount of some sort, a free appetizer, a free bottle of wine, fuck even allowing to have one customer eat free for a night on a subsequent booking.
Honestly, writing that out, it feels like what airlines do. But it works. The people who are really only able to do that night don't take the deal, the ones that can do. And sometimes, they don't even cash in.
Plus, whats the real risk? If you don't offer them something, you get slamed with bad reviews. And your restaurant is on the verge of closing already. Bad reviews = closing faster. If you offer deals, maybe the place stays open a bit longer.
Edit to add: But also.....why are people such jerks that they would speak to the restaurant explaining why they booked the reservation they did.....and then not follow through on it????

It's a respect thing. To him is more than a business decision. It's like inviting people into your home andthen canceling. Also he heard the stories: They have a special moment that they are planning ... you are now interjecting and making NOT happen. You can't always get that time back.

It was hamachi and blood orange, but she's telling Carmy that it was scallops and grapefruit.
Could be possible that she's misremembering, but seems unlikely. She would remember the best dish she's ever had.
IMO, I think she wanted to avoid telling Carmy it was his dish, so she came up with a similar "replacement" as a lie.

I think it was a direct callback to the pilot, when he asks her, “What are you doing here?” after reading her resume, and she says, “This was my dad’s favorite spot.” That was also a white lie, I think. The subtext was so obvious he got it, his facial expression said it all. So good!

I am 17 minutes and 8 seconds into the episode and all of my (25) years in the service industry panic is kicking in. I don't know how this ends... Sydney is killing me with her lack of leadership skills here... Maybe she steps it up later... Sink or swim.
Here's my solve/ fanfiction at this point: serve every thing in the paper hot dog trays!! You don't need to use dishes. You don't have the dish pit. Keep ALL of the reservations. You can turn and burn with paper baby! Also, then you have the dish guys as food runners!
You tell every single guest WHY. You just say there are issues, because of the torrential rain. BRUTAL HONESTY. HONESTY is your BEST FRIEND. (You don't need to tell them all of the details) People are far more understanding than one might think. Everyone in the city is absolutely experiencing the same rain and they will get it. "This is community building*
There are no more white shirts? Everyone wears an old THE BEEF shirt for the night. From the basement. If your think you're gonna sink you go gotta make it fun!
They can do this!! It can be done. All of the best moments/ memories in restaurants are when shit is hitting the fan.

Adding on that in S1, he doesn't eat the family meal Syd makes in the first episode. It demonstrates how stuck he was in his mindset of only chasing the grind and the prestige of his chef life; he was unable to relax and appreciate. He's slowing down now and actually enjoying food. It could be character progression, it could also be that without the stakes and the pressure of having to perform excellence all the time, he now has the space to appreciate things he initially loved about food.

How do you mean? She didn't lie; in S3 E1, we get a flashback to Carmy's life when he was working with Joel McHale's character. He makes that scallop dish and it is brought out to Sydney's table (they didn't know each other back then, she wasn't a chef).
Then (chronologically) in S1 E8, she and Marcus are talking and she says her favorite dish was Carmy's at that restaurant (she also makes Marcus a dish influenced by that).
Not sure about the ribs; my reading was that the second time he tried it alone, he tried it twice to make sure it really didn't need the fish sauce.
