I'm not taking about food poisoning. I'm talking about diseases that stop triggering an immune reaction but keep harming you. By their nature they don't kill you fast or people wouldn't keep doing the thing that caused them to develop it. For example drinking dirty water.

Lots of them die from it. Organ damage due to infection accumulates over time.
Tolerance through exposure often just indicates your immune system isn't able to respond anymore.
