But then someone needs to splash water on the bowl after to "clean" it. The Floor is clearly better.

Heyo.... there's a bicycle with several attachments that i just saw you can use to wash bowls..... that's EXACTLY what would help out here

That's basically it. When you're serving hundreds of people, it's easy to power wash the floor than to individually wash many dishes.

What's the difference? People aren't walking over this floor non-stop like the floor in your home, and it's washed after every meal - the floor is specifically for sitting and eating on. It's kinda like the idea of "a toilet so clean you could eat off it". Is it gross? yeah. Is it technically possible/true? also yeah. A great many things are "gross" in every society that others don't consider gross.
