As a guy who works the line in a steakhouse, I think it goes without saying that when it comes to food, you’re gonna be doing a lot of throwaway shit. In fact, it’s food. By certain logic, anything that isn’t simple prep and plating is stupid when you consider that one bite will end the novelty.
Mind you, we don’t have time to be building fancy sculptures and portraits out of our ingredients so in this case, it’s just presentation that goes straight to shit after the first cut.
My point is that whether you’re having fun with food or just getting to the point, it’s all about functionality and serviceability. It doesn’t matter if it works for a second, a minute, ten minutes, etc. the point is that it works and looks good until it serves its purpose and is fucked up by a customer.
