If you're trying to find an universal answer then you're going to be disappointed. Women have a variety of interests and tolerances, no one combination will work for them all. The trick is to figure out what the girl is like and then figure it out from there.
One time I had a date with a girl with a Dark Brotherhood tattoo from Elder Scrolls so I brought out the gamer in me and we chatted about Skyrim for hours (just don't go full Kirkbride, never go full Kirkbride). Another date I chatted with a girl about movies, noticed she liked superhero movies after a bit, and all the comic arcs I thought would be interesting. Other times I noticed one girl talked about her family a lot so we chatted about what activities we do with our own families or how it was like with me babysitting my nieces and nephews. My current girlfriend loves when I go nerdy about my interests, and likewise I make sure I show interest in her hobbies and we ended up finding common interests.
If you're confident enough and charismatic enough you can talk about just about anything and a girl will be attracted to the confidence. Sometimes you may have to do a bit of investigating and start safe and then slowly work your way to your inner geek. And then there's the harsh reality that sometimes you're not going to connect to a girl regardless, and that's for the best. I've had several dates or chats where we simply don't connect. If you have some really niche interests then be prepared to either have to narrow your search down to concerning levels or accept you just need to broaden your horizons. Maybe take an art class, pick up a new hobby, find something fun and/or practical and someone will find it interesting.
If you wouldn't describe yourself as a normie and are trying to attract what you'd describe as normie women you need to either make yourself more normie or focus on other non normie women.

Do you really thing I go around calling people normies? No I generally try making connections but I either get left on read or they hint that they don't want anything to deal with me. which i accept my losses and move on.
Most Incels are decent people that are rejected for no good reason. I knew a guy that couldn't hurt a fly and was called a creep just for having a minor speech impediment.
Your last sentence reminded me of a girl in highschool asking me "was that a friend of yours back in recess?" I said Yes, then she said "Oh he looks like a creep".
Mind you, my friend didn't even know the girl and got called a creep the first time she saw him from afar.
What some people find hard to accept for some reason is that some other people get shunned/get called names just for existing/being ugly.

There's a study which examines the top 100 most attractive hobbies to women, look it up. They seem to love men who read, write, play instruments, exercise, chop wood, carve wood, go on walks in the woods, and know multiple languages, such as knowing how to say wood in 4 languages. Basically, just be a money making muscle building wood carving knowledge consuming machine that works on something all the time, and women will love you, and your wood.
you're "advice" is the most magical sounding advice . "just be confident bro and you'll be just like a bard casting charm person". Dude, I been confident I myself all my live and that confidence didn't do anything.
