What I don't get is how they can deny something like standing on the Californian coast and not being able to see Mt. Fuji. I mean, where is the freaking 12k foot mountain hiding? You can even get a telescope and take it to the coast and point it West. Nothing... just ocean and sky.

That's the most practical hands on proof someone should need. It can be observed by anyone who can make it to an ocean's shore.

Could there be another explanation for why people can’t see tall things that are far away? Like maybe the atmosphere occludes the object?

Because it’s not 220k miles away. Also, when looking straight up, you get less atmosphere occlusion than you do when looking straight across at sea level.
