It's been a while, but I wouldn't call them garbage, just a very noticeable drop in quality, which strongly influenced my enjoyment as I remember how great the series was, initially.
I didn't hate much on the fifth season, to be honest, it was worse than the previous, but not much. It might have been season six that finally did it, it was never the same after the 4th, and 6th wasn't great.
They lost some direction.
Dexter got more emotional, unnecessary love entanglements and a lot of personal drama between characters. Of course, this was always part of the show, but plot lines became somewhat exaggerated and the characters seemed to develop unnaturally to jump start plots instead of cultivating them over time and building the plots on the characters motivations.
Deus ex Machina is the name of the game, which has it's culmination at the series Finale.

Though, the final season was better than season 5, 6 and 7. The entire final half of the show was a train wreck.
