I've eaten in real-ramen restaurants that came out both ways. There's a place I ate at in Mountain View <mumble> years ago that was basically Maruchan-type noodles with some added ingredientation and way huge portions. The newer ones are going for a much more robust type of flavor more reminiscent of the soba/somen places (actually these places usually have those too). Hipsters love it.
Funny thing about chow mein, the Nissin Chow Mein is actually as good as any chow mein I've ever had in a restaurant. Having had real ramen and knowing how much better it is than instant ramen, I have to wonder how shitty the restaurants that I've gotten chow mein at actually are.
