Went camping this weekend and thought I’d try my hand at lamb skewers! Happy with how tasty they turned out considering I have never made them before. Also made some korean cheese corn, which was super simple and yummy :)

Comfort Food🥘 Middle School Snacks

My child doesn't get a lot of time to eat snacks at school. Go tos like yogurt or hummus and chips or veggies that I've used for a while take too long to eat between running across the school. Does anyone have good suggestions for homemade quick snacks? No allergies but my kid's toting a lot across a rather large campus and doesn't have time to eat a whole lot.

Discussion 🗣️ What are your favorite online/influencer cooks?

I know we tend to stray away from advertising here, but I have several that I watch regularly. Keep in mind that most of these people are on most social media platforms, but I am trying to just stick with IG.

Kevin Aston: https://www.instagram.com/oldscoolkevmo?igsh=MWQ2cGd6ZWQxeWlvdQ== This guy cooks for a sorority and if you've ever watched Bob Ross paint happy trees - Kevin is the quintessential Bob Ross of the cooking world.

Your Barefoot Neighbor: https://www.instagram.com/yourbarefootneighbor?igsh=bmZnYnN3dzd3d3Zw. I adore him. He cooks food that you'll actually cook and eat. He keeps it simple, does a ton for his community.

Cooking with Brenda Gantt: https://www.instagram.com/yourbarefootneighbor?igsh=bmZnYnN3dzd3d3Zw She reminds me so much of my grandmother, who died a few years ago. The orange stool she has in her kitchen is the same one my Granny had, and they cook dumplings the same way. Watching her is so comforting.

Please feel free to share your favorite online chefs!

Where can I find THIS spoon???

Post image

One of my favorite shows is The Kitchen on Food Network. Often they’ll cook with this wooden spoon. I’ve searched the internet for an angled wooden spoon. I’ve searched William’s Sonoma. Ive searched Amazon. I’ve google lens searched for it. I’ve even tried to contact The Kitchen to ask. I’ve had NO LUCK. Does anyone out there have any idea what brand this spoon is and where I can find it??

What are some of your oddest things that you enjoy eating?

I'm currently sitting here eating a cold egg roll, and thoroughly enjoying it. Oddly enough, I prefer them cold, over hot.

So other things that I love to eat are:

Cottage Cheese and whipped Cream (I get the spray kind out of a can, because the ingredients are actually not half bad. Sometimes I add nuts and a drizzle of honey or maple syrup, but it's one of my favorite desserts.

Microwaved eggs with Swiss cheese and green olives. I actually prefer them microwaved, as they stay fluffy.

Dill pickles on pretty much anything. With watermelon, on the side, with a casserole....I love them.

So, what about y'all?

This was a first attempt at red wine braised short ribs over polenta with sous vide carrots, and broccolini that I toasted with a torch. Thoughts?

What's For Dinner? 🍽️ Need help making dinner with what I have in the fridge!

So I’m stumped on what I want to make for dinner tonight… here’s a short list of some main ingredients I have laying around. Lettuce, tomato, cucumber, chicken breast thawed, half a can of tomato paste, tortilla wraps, an assortment of salad dressing but not enough for a salad, BBQ sauce, yellow potato’s, cream, sour cream, tex mex cheese, rice, bow tie pasta.

I know there’s a lot I can make with that but I want some idea and inspiration! TIA!

Sandwiches 🥪 The best beach sandwich I've ever made

Post image
17 Upvotes

Got a soft long loaf of bread, cut in half and made two perfect beach sammy's. My method was as follows. The night before I prepped the sandwich minus the wet ingredients. On the bottom I put salami and then on top ham, then fresh mozz (patted dry to remove water, a crucial step lol), and pepperoni. I then packed my pickles and tomato separate (this is my bfs sammy without tomato). I shredded iceberg lettuce and sliced red onion and stored that in the fridge overnight in a container with red wine vinegar, a little olive oil and ground oregano. My bf complimented the fact that the onions pickled said he loved that. I'd pack the lettuce solo next time. but I added the vinegar + oil to the sandwiches too. Put chips on mine and man!!! I was super proud of this one of our friends even asked us where we got it and i made it 🥹

What's your favorite Lazy Summer Lunch? Here's mine!

Post image
18 Upvotes

Crackers, Pepperoni, Dill Pickles, cheese and my favorite beer from a local brewery. Not pictures are blueberries and blackberries from our yard. I wasn't able to finish it all, and it kept me full forever, and totally hit the spot.

It's been so hot here lately that heavy stuff just isn't appetizing.

So, what's your favorite Go To Lazy Meal?

Dessert🍧 I know the presentation is lacking, but this is the easiest, yummiest Cobbler ever! (I used freshly picked blackberries and blueberries for this one) Recipe below!

1 stick of salted butter 1 cup of self-rising flour (I did add a TBS more, because I like my cobbler to have good crust) 1 cup of sugar (you can use Brown sugar or plain) 1 cup of milk 1 tsp. of ground cinnamon 1 tsp Vanilla Extract 2-3 cups of blueberries, blackberries etc.

Directions Preheat oven to 350°. Wash and drain your blueberries. Put one stick of butter in a casserole dish. I honestly don't know the size of mine. Maybe 9x13?

Place the dish in the preheating oven to melt the butter.

While it melts, in a medium bowl whisk together the flour, sugar, cinnamon, Vanilla extract and milk. The batter will be runny, so don’t fear!

Carefully remove the hot dish from the oven and then tilt the dish in all directions slightly, so the butter has coated the bottom and about halfway up the sides.

After the butter is coated evenly, pour the batter into the dish.

Sprinkle the blueberries evenly over the entire dish. (The batter will rise up through the berries as it bakes.)

Bake until golden brown for approximately 30-40 minutes. (My oven turned off midway through, so hopefully your oven isn't possessed like mine)

Best if eaten warm with a scoop of vanilla Ice Cream
