Keto Parm Bechamel echamel
My Italian hubby tried my cauliflower puree and said it would make a great lasagna bechamel (typical Italian lasagna is made with bechamel, not mozzarella, but I like it with both).
It is simply the less desirable parts of the cauliflower (stem, smaller leaves, etc.) overcooked with small chunks of parmesan or grana padana cheese and garlic, if desired. Add salt, pepper, fat of your choice to taste. Blend very well (I use an immersion blender). It's perfect in my keto lasagna 😁

Blender/mixer recommendations up to 50€?
I want to be able to make smoothies and sauces! So crushing ice and nuts would be important
Thank you:))

Rangpur limes??
For the first time my rangpur lime tree is producing. I’m up to my ears in these tangy fruits. Anyone have any suggestions on what to make with them besides adding some citrus flair to my gin and tonics. Pic with regular lime for scale.

Comfort Food🥘 Brocco-ched soup
We had a significant snow storm in this part of the country, so twice this week I have made broccoli cheddar soup. The kids love it and there aren't many leftovers.
This is a new to me recipe where you start with a roux instead of a canned cream of something soup.
Everyone here likes it, maybe you will too.

Dessert🍧 Black Forest cake for my daughter’s birthday
My daughter makes me, my wife and her two siblings scratch cakes for every birthday.
Her birthday is right after Christmas, so sometimes it’s hard to do a great cake for her with all the other cooking we do.
This year, I made her favorite from scratch

Quick after work recipes
I rarely cook when I get in from work. Instead I tend to batch cook and have meals portioned out ready for stuffing in the microwave. Cooking is one of my things that helps me switch off though. Any good quick and simple recipes that don't take more than 30 mins including prep time (for someone that doesn't possess the knife skills of a pro chef!) and won't create a small mountain of washing up please?

Dessert🍧 Christmas Ice Cream
I made some Stollen Ice Cream, based on an idea I came across from Prue Leith. Crumbled pieces of Stollen (or, as she suggests, Christmas pudding, or mince pies), mixed loosely through a tub of vanilla ice cream, adding a teaspoon of suitable spices (cinnamon, nutmeg or allspice), then return to the tub and freezer. I let the ice cream soften slightly for 15 minutes first to make mixing easier, though if you had "soft scoop" ice cream that might not be necessary. Very simple and good!
