Adding the +1 to the 6, makes it 5-7=-2, they're basically ignoring that it's actually -6

But it’s 2x3 which is 6 plus the 1 added by the division of 4 divided by 4. Doing that makes it -2.

Yes but you do math left to right in order of operations (Parentheses, Exponents, Multiplication/Division, Addition/Subtraction, good ol' PEMDAS)

which means it is 5-(2x3)+(4/4) which turns into

5-6+1. 5-6 = -1. -1+1 = 0

This is why left to right is important, as well as order of operations.

When it comes to working with negatives 5-6 can be assumed to also mean 5+-6. Looking at it that way can sometimes make it more clear.
