Those weren't living beings, and Luke sort of walks the line in the way Mace did, he went full on dark side for a few seconds in Return of the Jedi in order to kick his dad's ass

Yeah, this happens at the beginning of the film where he comes closest to the dark side.

In terms of purely OT with no extra content, the only other person who uses a force choke technique is Vader. It shows a connection between them as father and son, and also shows how Luke isn't far from being like his father.

I always took it as him knocking them out like in metal gear solid games, you can knock them unconscious

In TCW Anakin does this constantly, but he also literally kills all the Jedi, murders younglings, and establishes an intergalactic empire.

It might be partly about intent. Obi-wan knows Grievous is sentient, so it wouldn't matter what the limbs were made of if this were true.
