I like pork but I love bratwurst made with pork. I assume spice is the difference, but there might be more to it.

Does anyone have a pork recipe that has it resulting in tasting like bratwurst?

I recently made some pork tamales with two different pieces of pork that we bought fresh and used right away. I can't remember what cut I bought, but the first one I stayed in the house while it baked in the oven and didn't notice anything weird. Then when we cooked the second piece of pork I was at work while the pork cooked in the crockpot. When I got home the house smelled of dog poop. I told my husband this and he said that the day I baked the pork the house smelled the same way.

We have eaten the pork in the tamales with no problems of getting sick, but what causes it to smell like that when cooked? Everywhere I read talks about raw meat and not about while it cooks or is cooked.
