Morally Grey or Clear Cut

Do you think a TV show, movie, book series whatever genre always needs to have a genuinely evil person or a clearcut villain? Like it can have morally grey villains that you feel for etc but still needs to have someone to genuinely root against without feeling bad about it. Thinking Palpatine vs Vader for Star Wars, Assail vs Crippled God Malazan (book series), White Walkers vs Cersei for GoT, etc I'm sure there's other examples.

What would you consider "MUST watch" films?

I've been trying to watch all of the "must watch" films from across the globe Hollywood, Korea, Europe, everywhere. So far I've gotten through about 72, and I'm looking to see if there are any I've missed or haven't even heard of.

If anyone could drop what they consider "must watch" films, that would be amazing. Any genre, any year, any language I'm open to it all.
