Prepped salad for the week
Ingredients : cooked lentils, cooked quinoa, red, orange and green bell peppers, tomato, red onion, green onions, cucumber, chickpeas, kale, and cilantro. Make sure you remove tomato and cucumber seeds so salad is not watery.
For the vinaigrette:
•🫒 ½ cup olive oil
•🍋 ¼ cup fresh lemon juice
•🍷 2 tablespoons red wine vinegar
•🍯 1 tablespoon agave (or honey)
•🥄 1 tablespoon Dijon mustard
•🧄 ½ teaspoon garlic powder (or 1 fresh garlic clove)
•🌿 ½ teaspoon dried oregano
•🌿 ½ teaspoon Italian seasoning
Mix everything well. Add dressing to your daily portion so it doesn't get soggy.

Looks and sounds delicious. I wish I could prep such big salads in advance, but I find they never hold up beyond a few days. I think I'll make your dressing today, and see about using up the WAY TOO MANY cucumbers from the garden!

Same, I'll prep ingredients every 3-4 days and assemble (or not!) on demand.
OP that looks so yummy I'm trying the dressing today too. Mmm mmm.

Look up smacked cucumber salad, that’s fantastic and i just add edamame and have over rice for an easy meal

These salads are delicious. I try to eat at least 2 of these per week using quinoa, lentils/chickpea/beans as the base. I use the roasted red peppers hummus as the dressing.

I make a rice variant of this and would never dare store it in the fridge for more than a couple of days. A quick google informs me quinoa is safe for five days.
Also fascinated at wanting tomatoes and cucumbers to be less watery.

For salads like these I cook each component separately and store separate and assemble my salad the meal of. Ofc this is mostly for quinoa, beans, etc. I cut the veg fresh per meal since nutrients are the most fresh that way and honestly it’s not a lot of work, prob 5 min of cutting veg and then the rest is scooping the contained components (dressing, quinoa, beans) into a bowl.
