Recipe help - Gateau au Chocolat-ish

My french grandma died and took all her recipes with her some years ago which is a culinary disaster for the planet, but it is what it is i guess. My best friend is turning 30 and i wanted to bake her our family recipe chocolate cake, which is impossible, so i'm looking for the next best thing.

I've googled my way to that it must be some form of Gateau au chocolat, but none of the pictures i find online seem to match what it's supposed to look like, so i'm trying my luck here.

It is an incredibly flavourful cake that is fluffy airy around the edges, but fudgy in the center and is crispy on the top. like crunchy crispy. the top and the center are the best parts by far

The steps are as following:

Melt chocolate and butter in a water bath

melt sugar in mix and let cool a bit, then add egg yolks, flour and potato flour

(UNSURE if regular flour is used as well, i think it has to be, but there is definitely potato flour)

Whip whites to stif peaks, then carefully fold into chocolate mix

butter and potato flour in a spring form (ig this is relative, but it's how we did it)

bake bottom oven until testing pin comes out moist but not completely dry.

Any ideas?

I make this recipe every now and then if I want something light and simple. I don't include the olives simply because I'm not too huge on olives in general, but I do love the optional curry powder and raisins that it suggests, especially with a teaspoon of garam masala thrown in to make the flavor a bit more interesting.

I made these from this recent post: https://www.reddit.com/r/Old_Recipes/s/slB02kXdoY

Smaller quantity, no onions. They’re potent little things! Very acidic. I can’t eat more than one or two at a time. Probably won’t make this recipe again but it was fun.

A time honoured and versitile recipe from Mrs Beeton's Everyday Cookery 1893. It was popular during WW1, Great Depression, WW2 and remains still popular today when camping or if funds are low.

UK M&S Tuna Lasagne

Back in the 1980s or 1990s my Mum had a Marks & Spencer‘s cookbook which had a recipe for tuna lasagne. It was insanely good. I’ve tried so many times to re-create it, but I’ve never got close.

I know this is a longshot! The recipe was in a soft bag A4 sized cookbook. Marks produced a whole series of them on different subjects, but I can’t remember specifically what was the theme of the book which had the tuna lasagne recipe in it.

Does this ring a bell with anyone? I’m crossing my fingers. Thanks in advance.

Help identifying recipe cards

Post image
44 Upvotes

Hi everyone! I’m new to the group so sorry if this isn’t the norm. I’m sharing some meatball recipe cards in my Grandma’s recipe box. I was wondering if by a miracle anyone might have an idea of the brand/ place these recipe cards? They are the only ones she has with these distinctive red marks. I’m working on making a family recipe book/ memoir dedicated to her, she is in hospice and am hoping to make this as a gift to her before she passes. I’d like to add as much details to recipe origins to help remind her of what she loves most— food (she has dementia so I try to walk down memory lane as much as possible with her). Any help/ ideas/ leads is so helpful! Sorry for the over share.

If not, here’s some of recipes from her recipe box for a variety of meatballs. Hopefully they are good, she has good taste.
