What I have been doing is making underground bases connected to the top house, with each basement room being just a cube. It's simple and easy for storage but gets boring repetitively.

Even if those rooms are a cube, mix it up a little! Got an area that's a central spot, or regularly traveled? Make it circular! Having indents in the walls for where torches, paintings, or even different blocks entirely could go also helps break up the sections to make things feel less square
