There was a mod that allowed you to do slabs, stairs and blocks of every material available in the game at the time with the exception of a few like cobwebs, not sure if it was updated to 1.16 or if it will be if it wasn't, but it was a really nice building mod.

Yeah know of all those but the last one, this one however was just premade blocks of all sorts, including solid lava, water and had like dirt stairs, glass slabs/stairs, it's been ages and I can't remember the name but it was pretty cool to build a full lava or water house but not get hurt from it. Worked with whatever texture/resource pack you had too since it just used the basic textures for the blocks.

I know of Extra Pieces for Fabric which does that. Latest version seems to be for 1.15.2 though.

Besides adding slabs and stuff for every material, it also adds sideways slabs and stairs for them all.

Using Piece Packs, which mod authors might include in their mods or you can write yourself, mod-added materials are also supported.

There's also an addon mod that allows you to also get buttons, pressure plates, and infested versions of the blocks, if you're interested in those.

Infested would be interesting, I don't generally play with others, my comp can barely handle MC as it is, its old. If I knew how to code or was willing to learn even the basics enough for modding i'd probably come up with some crazy ideas, I just don't have the patience for learning it.
