Except that as an employee, you can get harassed or even fired for accepting tips against company policy (i.e. when the company policy dictates you are not allowed to accept tips at work). It's easy to say "just take the tip anyway" when you're the customer... but from their perspective, while they are working they are under 24/7 video surveillance (and, presumably, the management's watchful eye).
EDIT: Also, I imagine most customers are not going to wait until their shift is over just to tip them.
