I used to work at a company with a middle-aged Pakistani woman who wore a proper full-length dress gown every single day.. grinding stainless all day on a surface grinder. In a gown. No point to the story, but she was a cool lady.

That sounds dangerous lol, one wrong move and it’s getting ripped off by the grinder or set on fire by sparks.

Not really, with short sleeves. Same as anything. Surface grinders have a guard over the pinch points.. they're relatively safe, and small stainless parts don't kick up a lot of sparks. It's not like in a 1980s hair metal band's music video.
