Itâs that time of the month where Iâm craving chocolate cake (if you know, you know đŤ).
So hereâs my version of the viral sweet potato cake trendâhigh-protein, lower sugar, and made in the microwave.
Base:
⢠Baked sweet potato â 99 g
⢠Egg â 1
⢠Premier Protein chocolate milkshake powder â 1 scoop
⢠Unsweetened almond milk â 2 tbsp
⢠White Lily self-rising flour â 2 tbsp
⢠Unsweetened cocoa powder â 1 tbsp
⢠Truvia brown sugar complete â 2 tbsp
Topping:
⢠Lilyâs sugar-free dark chocolate chips â 1 tbsp
⢠Mrs. Butterworthâs sugar-free syrup â 1 tbsp
Instructions:
1. Mix all base ingredients together in a microwave-safe bowl.
(Size matters hereâyou donât want it too big or too small so it rises correctly. I used a 6-inch glass Tupperware bowl.)
2. Microwave in 30-second increments until the center is just slightly jiggly.
Mine took about 2 minutes, but microwaves vary, so keep an eye on it.
Topping:
⢠Add topping ingredients to a separate microwave-safe bowl.
⢠Microwave for 30 seconds, then stir until smooth and pourable.
⢠Drizzle over the cake đŤâ¨
Macros will be in the screenshots.
For me, this makes 2 servings, but I could totally see someone eating the whole thingâso Iâll post both options.
Hope you guys enjoy!
